Induction Hobs Quick Guide
An advance from the standard ceramic is the Induction Hob that uses magnetic field technology to efficiently heat only the pan and not the hob itself. This leads to a safer working environment as the cooking surface is a lot cooler plus the fact that many models will not operate unless the cooking zone can detect a pan being present. The drawback is that you will need induction compatible pans: aluminium and glass do not work. Widths range from 50cm up to 90cm although cooking zones are limited to 5 at most.
